Pumpkin soup velvet with Chutney Goji berry-apple-curcuma

A delicious recipe for cold winter days:


  • 11/2 kg of yellow pumpkin
  • 1 tbsp olive oil
  • 1 large chopped onion
  • 800gr water
  • 4 tbsp Chutney Goji berry-Apple-Curcuma
  • 500ml fresh milk
  • 1 tbsp butter
  • salt, pepper
  • 200gr gruyere
  • 300gr strained yogurt
  • Sunflower seeds


We clean the pumpkin from its seeds and peel, cut it into pieces, oil it lightly

Place it in a baking pan on parchment paper and cover aluminum foil

Bake it in a preheated oven at 240o C for 30 minutes

Sauté the chopped onion in butter over low heat for 5′ to soften

Pour in the milk and water to boil

Add to the mixture that boils the pieces of baked pumpkin and boil all together for 15′

Add the chutney goji berry-apple-turmeric, salt & pepper

Remove from the heat and pass the mixture to the hand mixer for a homogenized velvety texture

Pour in the gruyere and the strained yogurt

Serve in a deep soup dish

Sprinkle with sunflower seeds

A recipe is rich in antioxidants and vitamins!
