Vegan Pizza with red beans and Goji Berry & tomato sauce

Ingredients

For the dough

  • 2 1/2 cups Flour
  • ½ tsp Yeast
  • 1 cup lukewarm Water
  • 2 tbsp Olive oil
  • Salt

For the filling

  • 200 gr. Organic Goji Berry sauce with tomato and oregano (https://www.gojispirit.gr/index.php/en/)
  • 200 gr. Red Beans, boiled (half canned)
  • 200 gr. Smoked Tofu, cut into cubes
  • 200 gr. Vegetable Cheese, grated
  • 2 tbsp. boiled Corn
  • 1 chopped Red Pepper
  • 1 chopped Green Pepper

Method
Combine the yeast and some warm water until it dissolves in a bowl .

Add some flour and stirr very well until it becomes batter.

Allow the dough to rise in a warm place for 30 minutes.

In a large bowl, mix the remaining flour, puffed yeast, remaining water and oil. Knead it well until the dough does not stick to the hands. Let it rest for ½ an hour. Grease a pan No. 26 with oil and spread the dough, opening it with your hands.

Spread the organic Goji Berry sauce with tomato and oregano (https://www.gojispirit.gr/index.php/el/), vegetable cheese, red beans, smoked tofu, corn and peppers.

Bake the pizza at 180 ° C for about 30 minutes until topping are golden brown. Slice and serve.
